Tex-Mex Sloppy Joes

tex-mex-sloppy-joesWe have this recipe once a week at my house. It’s so quick and easy and tastes great.

Makes: 8 servings

Ingredients

  • 1 pound uncooked ground chicken breast or turkey breast
  • 2 medium onions, chopped
  • 1 medium green sweet pepper, chopped
  • 1/2 cup loose-pack frozen whole kernel corn
  • 2 large cloves garlic, minced
  • 1 fresh jalapeno chile pepper, seeded (if desired) and finely chopped
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano, crushed, or 1 tablespoon snipped fresh oregano
  • 3/4 cup ketchup
  • 4 teaspoons Worcestershire sauce
  • 8 whole wheat hamburger buns

Directions

  1. In a large nonstick skillet combine ground chicken breast, onions, sweet pepper, corn, garlic, chile pepper, chili powder, cumin, and oregano. Cook over medium heat until chicken is no longer pink and onions are tender, stirring frequently.
  2. Stir in ketchup and Worcestershire sauce; heat through.
  3. Divide mixture among buns.
