Roasted Parmesan Zucchini

Best zucchini I’ve ever had — the garlic and Parmesan flavors are awesome.
Makes: 5 servings
Ingredients
- Cooking spray
- 2 large zucchini, halved and sliced into 2-inch pieces
- 2 teaspoons olive oil
- 1/2 teaspoon garlic salt
- 3 tablespoons grated Parmesan cheese
Directions
- Preheat oven to 450 degrees. Coat a roasting pan with cooking spray.
- Place zucchini in pan. Drizzle olive oil over zucchini and sprinkle evenly with garlic salt and Parmesan cheese.
- Roast approximately 20 minutes.
