Roasted Parmesan Zucchini

parmesan zucchiniBest zucchini I’ve ever had — the garlic and Parmesan flavors are awesome.

Makes: 5 servings

Ingredients

  • Cooking spray
  • 2 large zucchini, halved and sliced into 2-inch pieces
  • 2 teaspoons olive oil
  • 1/2 teaspoon garlic salt
  • 3 tablespoons grated Parmesan cheese

Directions

  1. Preheat oven to 450 degrees. Coat a roasting pan with cooking spray.
  2. Place zucchini in pan. Drizzle olive oil over zucchini and sprinkle evenly with garlic salt and Parmesan cheese.
  3. Roast approximately 20 minutes.
