Oriental Cole Slaw

This salad goes great with Tex Mex Sloppy Joes. Be sure and use sesame oil as the recipe calls for — it’s the secret ingredient.

Makes: 7 servings (1 cup per serving)

Ingredients

  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 4 scallions, sliced
  • 3-ounce package ramen-style noodle soup mix, uncooked and crushed
  • 2 tablespoons sesame seeds
  • 3 tablespoons sliced almonds
  • 1 flavor packet from noodle soup mix
  • 1 tablespoon sugar
  • 3 tablespoons rice wine vinegar
  • 1 tablespoon canola oil
  • 1 teaspoon sesame oil

Directions

  1. In a large bowl, toss cabbage, carrots, scallions, and crushed noodles together.
  2. In a nonstick skillet, saute the sesame seeds and almonds over low-medium heat for 2 minutes or until toasted; set aside.
  3. In a small bowl, whisk together remaining ingredients. Pour dressing over the salad and toss to coat. Sprinkle sesame seeds and almonds over the top of the salad.

    I love this recipe and the fact that is sooo much lighter than other versions I’ve tried. One note for other readers, Nissin makes a product called “Choice Ramen” , (Krogers carries it) we use instead of regular Ramen, it is 95% Fat Free, as the noodles haven’t been fried like in traditional Ramen, and the soup seasoning packet has 25% less sodium

    I agree, this recipe is much lighter than some but it still has great flavor. It’s one of my husband’s favorite side dishes.
    Thanks for the great tip on Choice Ramen - I’m going to look for it next time I’m at the grocery store.
