Oriental Cole Slaw

This salad goes great with Tex Mex Sloppy Joes. Be sure and use sesame oil as the recipe calls for — it’s the secret ingredient.
Makes: 7 servings (1 cup per serving)
Ingredients
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 4 scallions, sliced
- 3-ounce package ramen-style noodle soup mix, uncooked and crushed
- 2 tablespoons sesame seeds
- 3 tablespoons sliced almonds
- 1 flavor packet from noodle soup mix
- 1 tablespoon sugar
- 3 tablespoons rice wine vinegar
- 1 tablespoon canola oil
- 1 teaspoon sesame oil
Directions
- In a large bowl, toss cabbage, carrots, scallions, and crushed noodles together.
- In a nonstick skillet, saute the sesame seeds and almonds over low-medium heat for 2 minutes or until toasted; set aside.
- In a small bowl, whisk together remaining ingredients. Pour dressing over the salad and toss to coat. Sprinkle sesame seeds and almonds over the top of the salad.

I love this recipe and the fact that is sooo much lighter than other versions I’ve tried. One note for other readers, Nissin makes a product called “Choice Ramen” , (Krogers carries it) we use instead of regular Ramen, it is 95% Fat Free, as the noodles haven’t been fried like in traditional Ramen, and the soup seasoning packet has 25% less sodium

I agree, this recipe is much lighter than some but it still has great flavor. It’s one of my husband’s favorite side dishes.
